In my wanderings I ran across someone who said they had a difficult time getting elderberry jelly to gel. I have had great success with a 50/50 mixture of apple and elderberry. It is also pretty and delicious! If anyone has had success with elderberry mixed with something else I'd like to hear about it.

Grapes. I used the sure-jel recipe for grape juice. I made plain elderberry jelly and didn't have any trouble with it gelling

Had the problem of Elderberry jelly not setting two years ago, after picking the berries and hauling them all the way from Utah to Colorado and making the jelly according to the directions. Called the extension service, the was told to "just cook the jelly again, the same length of time, and it should jell just fine, or just use it for pancake syrup". I tried to cook it again, and could never get it out of the jars! It does work to mix it half and half, though, and I'm anxious to make some this fall again! Jan

I have been told you can also make jelly from mountian ash berries they are a close relative to the elderberries does anyone have arecipe for this
