Me, I think I'd learn how to play guitar. Although, it might be nice to play piano "really well" instead of just "moderately well, given intermediate-level sheet music and plenty of time to practice."

Given the "Guarantee" factor I would have to say medicine. I am learning new (medical) things every day but given the Guarantee option I would become a doctor, Not just a paramedic. I would specialize in infectious diseases, and treating those who are affected by them including the families of sick people.They are often the forgotten victims of the illness process.

I would have to say piano, as well. I play moderately well, but I would like to be able to play Tchaikovsky's Piano Concerto No. 1. And I would like to make a living at it and tour the world.Or it would be cool to be an Olympic level ice skater.
Or just to be really good at Stratego.
