This has probably been answered before but I can't find it. I know rennet usually keeps about a year. I have some (liquid vegetable) rennet that is probably closer to 2 years old. It's been kept in the refrig. Is there some way to test it to see if it's still good or do I just throw it out? Don't mind buying new rennet, but I wanted to use it today and just hate making a trip to town.

Hey, I have some rennet in the frig. for about 10 years now. Last year made all kinds of cheese and it seem to work fine. I thought maybe it might get weak over time. But seems to do fine. My rennet was the real thing not vegetable stuff. I would just test it out on a small pot of milk first to see if it will set up.

My animal rennet is quite old too. I keep it in the refrigerator with the bottle wrapped in aluminum foil to be sure no light reaches it. It works like a champ and I make cheese quite often.I never had any luck with the junket type rennet and didn't like the difficulty I had measuring from broken tablets of regular rennet. Others may have been more successful. Mine came from Cheesemaking Supply Outlet, 9155 Madison Rd., Montville OH 44064

Thanks for the help! My rennet is fine. I had purchased the veg. rennet because that was the only kind the health food stores around here carry, and the grocery stores only carry the junket rennet. Altho mine was still ok, if the animal rennet lasts as long as you say, I think I will order some. Thanks again!
