Singing Cake Recipe

Does anyone have the recipe for Singing Cake? I saw in the Countryside Magazine (right hand page...an issue or two ago) but since then, someone misplaced the magazine...sigh...

Would appreciate it as my granddaughter and I really wanted to bake it.

This is one from the May/June 1998 issue.

Singing Cake

1 cup butter

1 cup raisins

2 squares bitter chocolate, melted

1 teas. cloves

1 teas. strawberry jam

2 teas. baking powder

1 cup buttermilk

2 cups brown sugar

2 teas. cinnamon

3 eggs, seperated

1 cup nuts, chopped

4 cups sifted flour

Cream butter and sugar. Add egg yolks and stir. Add melted chocolate and stir. Add raisins, cinnamon, cloves and flour, stir. Stir in nuts and jam. Now add the baking powder to the buttermilk. Stir quickly into cake mixture. Fold in the stiffly beaten egg whites.

Quickly pour into a greased and floured angel food pan. Bake at 350 degrees until cake stops singing. About 45 min.

There were some follow up notes in the Nov./Dec. issue

1)Use fresh baking powder

2)Have the egg whites beaten before you mix the cake, timing is an issue

3)Don't make on a humid day

4)be careful not to use to much cinnamon

There was a question of altitude also!!

Cher, can you remember what the cover looked like?? I looked at the last three issues and didn't see it. (doesn't mean it wasn't there, but I didn't find it)

There was a mistake in the recipe in the earlier issue! The correct recipe is in the Nov/Dec 2000 issue on pg. 29, titled 'Why Cake Can't Sing'.

Singing Cake

(Read through entire recipe before preparation.)

3 eggs, separated

1 c. butter

2 c. brown sugar

2 sq. bitter chocolate, melted

1 c. raisins

2 t. cinnamon

1 t. cloves

4 c. sifted cake flour

1 c. strawberry jam

1 c. chopped nuts

2 t. baking powder mixed into 1 c. buttermilk

Beat the egg whites until stiff, set aside. Cream the butter and sugar. Add egg yolks and stir. Add melted chocolate and stir. Add raisins. Add cinnamon, cloves, and flour, stir. Stir in nuts and jam. Now add the baking powder to the buttermilk and quickly stir into the cake mixture. Fold in the stiffly beaten egg whites. Quickly put mix into greased and floured angel food cake pan. Bake at 350 degrees until cake stops singing, about 45 minutes. Make sure you time this so your guests are present during the baking. Once the cake is baked, the effect is over.

You guys are always killer on my diet!!!!!!! That sounds good! My mom is coming to visit today.(she is a city girl) Think I will sing to her with the cake! Better than my singing or the kids. We only harmonize accidentally! Thanks Gang!
