development of the bread - culture

I'm really interested in knowing, why so many people world wide, are eating more ethnic foods, and especially bread. 40 years ago, most people ate local bread. Is it because of the nutrition and health boom that has been seen in the last 15 yeaqrs or so, or is it because of migration?
