Looking for a recipe for crunchy raisin cookies.

My husband loves the coffee dunking kind of raisin cookies but so far all the ones I have tried have turned out soft. Anybody got a recipe for the crunchy kind? Thanks! Robin

I have a recipe for very delicious oatmeal/coconut/raisin cookies that you can make either chewy or crispy, depending on how long you bake them (the longer the crispier, of course, not at a high temperature). I find that you need a fairly good ratio of fat to dry ingredients for this. If you'd like the oatmeal raisin recipe, I can post it. If you don't like oatmeal tho (I love those cookies tho), it wouldn't be the best choice.

I have a receipe, I got off Kellogg's Raisin Bran Ceral box several years ago. They are very good and somewhat good for you. 2 cups raisin bran cereal ( crushed down to measure to 1 1/2 cups); 2 cups flour; 1 tsp. baking soda; 1 cup raisins and / or 1 cup choc. chips; (I use both); 3/4 cup margarine (soften); 2/3 cup sugar; 1/2 cup brown sugar; 2 eggs; Mix cereal, flour, soda, raisins and choc. chips, together until flour has coated everything, set aside; Beat margarine and both sugars until light and fluffy, add eggs and beat well. Stir in cereal mixture. Drop by tablespoon onto ungreased cookie sheet. Bake 350 degree oven, 12 to14 min. makes 3 doz. Very Good ! Hope you like them, I don't know how crispy they stay, they don't last that long around here ! Mary in Idaho

Thanks for the answers I will give it a go! Juile, We love oatmeal! Could you please post the recipe? Thanks! cookies never last long here either. With 5 kids and my husband they make short work on all that I bake!! Good thing I love to bake!!

Glad to oblige. These don't have any spices in them like some oatmeal cookies do. I find I prefer it that way as I think the spices interfere with the flavour of the oatmeal and coconut.

1 Cup butter, softened 1 cup brown sugar (or half brown, half white) Cream together. Then add 2 eggs 1 tsp. vanilla Measure 1 1/2 cups flour in a measuring cup, stir in 1 tsp. baking soda and 1 tsp. salt. Stir into batter. Then add 2 Cups quick cook rolled oats 1/2 cup shredded coconut 1 Cup raisins and stir well.

Drop by teaspoons full (or larger, if you prefer) on greased sheet, and bake approximately 10 minutes in a 375 F. oven. If you bake them carefully a little longer (carefully that they don't over brown), they turn out crispier. If you test bake a pan you can adjust time for your own oven.

I threw out some flour that had moths in it..had you made your cookies with that flour, they would be nice and crunchy. ;-)
