How does yeast make the bread rise?

Yeast consists out of a mixture of yeast, flour, water, sugar and salt. Yeast changes sugars in the dough into carbon dioxide and alcohol. The bubbles of carbon dioxide make the dough rise.

...and the proteins combine to make a strong elastic sheet called gluten (formed by adding water with wheat flour)which stretches but prevents the gases from escaping.
