Low-fat muffin recipes

I'm looking for a good basic low-fat muffin recipe that I can add different types of fruit to, like bananas, apples, blueberries, dried cranberries,etc. I *love* those Kellogs Nutrigrain Apple Muffin Bars, I have one (or two!) for breakfast every morning, but I'm trying to make more things from scratch to save money. Well, you can try adding applesauce instead of half the regular fat in any recipe you've got. That will reduce the fat content, however, it is fat in the recipe that makes the end product tender (and using finer flour with less gluten, such as cake flour as opposed to all- purpose). If you don't mind having to rip and chew a bit, you can eliminate almost all fat that way.

The Tightwad Gazette (volume 1, I think) has a great all-purpose muffin recipe. Also, using "wet" ingredients like mashed banana, applesauce and canned squash/pumpkin allow you to halve the called for amount of fat in any recipe. I'll look for that recipe for you.
