Can I make butter in stages?

Ok, I'm trying to make butter in glass jars--the easy??way, since I don't have a churn. Can I just roll it till it starts to solidify, then put it in the refrigerator and finish the working/salting later (like in a couple hours) as I have time? Picked up from a local dairy, and there were gallons and gallons of whipping cream, so I thought I'd try some before I give this all to the pigs and chickens. Anyone tried this? I did try a bit in the blender, but it solified instantly, even on low speed. Thanks, and have a nice Easter weekend everyone! Jan

We shake our cream in a large 3 gal. glass jar by sitting in the rocking chair. There shouldn't be a problem putting it in the fridge after it is done, but I would pour the buttermilk off of it first. It can continue to drain as it cools. Could need to warm up before it is easy to work as it is very hard when cold. In the summer we have had to put ice cubes in cream to make it stay cool enough to churn.Good luck set some fresh bread to rise and have fun.
