Here is an oatmeal cookie recipe. My family tells me they're good!

1/2 cup granulated sugar 1/2 cup packed brown sugar 1/4 cup margerine or butter softened 1/4 cup shortening 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon vanilla 1/4 teaspoon baking powder 1/4 teaspoon salt 1 egg 1 1/2 cups quick-cooking oats 1 cup all-purpose flour 1 cup raisins or chopped nuts, if desired.

Heat oven to 375 degrees. Mix all ingredients except oats, flour and raisins. Drop dough by rounded teaspoonfuls about two inches apart onto ungreased cookie sheet. Bake about 10 minutes or until light brown. Cool. Makes about 2 dozen cookies. 110 calories per cookie.

Suggest making at least a double batch - I never drop teasponfuls of dough. I just make a ball in my hands and drop. They go quickly so I make lots!

I use the recipe from the quaker oat can with a little modification. I use more raisins that called for and I replace half the white sugar with honey. The honey keeps them soft. Once I added too much honey and they were like pancakes. I've had good luck looking for things at allrecipes.com good luck.

My daughter just made these last night to enter in the county fair on Thursday. They are delicious!

Butterscotch Oatmeal Cookies

Preheat oven to 375. In a small bowl, combine 1 1/4 cups flour, 1 tsp baking soda, 1/2 tsp salt, 1/2 tsp cinnamon and mix together. In a large mixer bowl, beat 1 cup butter, 3/4 sugar, 3/4 cup brown sugar (firmly packed), 2 eggs and 1/2 tsp vanilla extract - beat until creamy. Slowly beat in flour mixture. Stir in 3 cups of oats and 2 cups butterscotch chips. Drop onto ungreased cookies sheets. Bake 7-8 minutes for chewier cookies and 9-10 minutes for crispier cookies. Makes about 4 dozen.
