Hi Gita! How are you doing? This is my family's favorite - my son always requests it for his birthday cake.

Cream together 1/3 cup shortening, 1 1/3 cups sugar, 1/2 tsp. vanilla. Add 2 eggs one at a time, beating until smooth. Stir in 1 cup pumpkin or squash puree. Stir together 1 2/3 cup flour, 1/4 tsp. baking powder, 1 tsp. baking soda, 3/4 tsp salt, 1/2 tsp. cinnamon, 1/2 tsp. nutmeg. Stir dry mixture into pumpkin mixture in 4 parts, alternating with 1/3 cup water. Do not over beat. Optional: Stir in 1/2 cup chopped walnuts or pecans. Pour into greased loaf pan and bake at 350 deg. for 45 min. Cool on rack 10 min & remove from pan.

This recipe comes from The Tightwad Gazette and I use it for Christmas gifts as one batch will be enough for 5 (13oz.) coffee cans. (Gone are the days of the one pound coffee can!)

3 eggs 1 tsp allspice 4 cups sugar 1/2 TB cloves or nutmeg 1 cup oil 1 cup applesauce 2 Cups of pumpkin puree 1/2 to 1 cup of nuts 5 cups of flour 1 cup dates, raisens, or choc. chips 2 tsp of soda 1 tsp salt 1 and 1/2 TB cinnamon

Beat eggs. Mix in sugar. Mix in oil and pumpkin. Combine dry ingredients and add to moist batter. Mix in applesauce, nuts, and chocolate chips (our choice). Grease and flour 5 (13 oz.) coffee cans. Fill with batter over 1/2 full. Bake at 350 degrees for 1 hour or until they test done with a toothpick.

Here's a pumpkin bread that often make in the mini-loaf pans and sell at fall festivals and farm markets for $2.50 per loaf.

Pumpkin Cranberry bread: 1 cup cooked, mashed pumpkin, 1 cup sugar, 1/2 cup milk, 2 eggs, 1/4 cup butter melted, 2 cups flour, 2 teasp baking powder, 1 teasp cinnamon, 1/2 teasp baking soda, 1/2 teasp nutmeg, 1/2 teasp ginger, 1 cup chopped nuts, 1 cup fresh or frozen cranberries (when making the mini loaves, I dice these up into small pieces, you could also use craisins). Beat sugar, milk, eggs and butter,combine dry ingredients, stir into pumpkin mix, fold in nuts and cranberries, pour into greased loaf pan (makes 1 regular size loaf or 3-4 mini loaves)(recipe doesn't call for it, but I always flour the pans also), bake at 350 for 70 minutes our until a toothpick insertd in the center comes out clean, cool in pan for 10 mins, remove to wire rack to cool completely (you have to adjust the cooking time for the mini loaves, I think about 30-35 mins, then check)

Here's a Pumpkin (or squash) Yeast Bread recipe, it is really good! Makes 1 large, really pretty golden braid.

1 package dry yeast, 2 tablsp warm water, 1 cup cooked, mashed pumpkin or squash, 1/3 cup warm milk, 1/4 cup butter softened, 1 egg, 3 tblsp brown sugar, 1/4 teasp salt, 3 - 3 1/2 cups flour (I've found that I use more like 4 1/2 - 5 cups flour) Glaze: 1 beaten egg, 1 tblsp water.

Dissolve yeast in water, separately: combine squash, milk, butter, egg, brown sugar and salt, mix well. Add yeast mix and 1 1/2 cups flour, mix well, add enough remaining flour to form a soft dough, turn onto floured surface, knead until smooth and elastic, place in greased bowl, turning once to grease top, cover and let rise in a warm place until doubled, about 1 hour, punch dough down, divide into thirds, roll each third into an 18 in rope, place on greased baking sheet, braid ropes together, pinch ends, cover and let rise until nearly doubled, about 30 mins, combine glaze ingredients, brush over braid, bake at 350 for 20 - 25 mins, or until golden brown, remove from pand cool on a wire rack
