Easy, versatile cookie recipe

Triplet Cookies:

Basic cookie recipe:

First, mix dry ingredients together:2-1/2 cups flour, 1 tsp salt, 1 tsp baking soda. Set aside.

In large mixer bowl, mix together; 1 cup each of brown sugar, white granulated sugar, and shortening. (Can use butter and/or lard) Mix well, add 2 eggs, 1 tsp vanilla, Mix well again, and then mix in the dry ingredients.

Now the fun part. Add any of the following ingredients as wished: cocoa powder, chocolate chips, peanut butter chips, dates, nuts, raisins, coconut, oatmeal.

oops, the phone rang, so I hit the post button in a hurry, not realising I didnt say how to bake them. Form into balls and place on ungreased cookie sheet. Bake at 375 for 10 to 12 minutes. To make really yummy chewy cookies, only bake till the edges are crunchy, and the middle does not look done. Allow them to remain on the cookie sheet for a few minutes after removing them from the oven, to allow them to fall and firm up.

I use this recipe to make platefuls of a variety of cookies in a hurry. You can divide the dough and make a lot of different kinds at once.

Daffodyllady -- I made these yesterday -- two batches (I bake big around here!) and I think there are about four left in the cookie jar this morning.

I split the double batch into quarters and mixed into them coconut, raisins, choc chips and granola. The coconut ones are GONE, the granola I think there might be one left for my morning coffee, and the raisin and choc chip have a few survivors.
