my soymilk won't curdlegreenspun.com : LUSENET : Countryside : One Thread |
I'm learning how to make tofu. I've made my soymilk and have one gallon. I used Epston salt as my coagulat, but nothing is happening. There is very tiny curdles but there isn't much of any of it. I've tried more epson salts - almost a cup now. But nothing is happening. Can someone please help rescue me? I would hate it if I can't do anything with it now, except soy milk. I'm sure it tastes pretty salty. I don't have the courage to taste it.

Go ahead. Eat some of it. I dare you! (Epson Salts is one of the really effective laxatives).

Uh, I don't think you need to drink the soymilk/tofu as it is. why don't you start again? Try getting Nigari from a health food store OR read the recipe again. Epsom salts, if I remember rightly, makes a soft curd. The laxative effect with a CUP in there would be, uh, formidible.

I have a soy milk machine and also make tofu. Buy the Nigari it comes in a dried form. Dissolve with water. I use 1/2 Tbsp nigari to 1/2 gal milk. Pour into HOT milk and stir just once. Let set 15 min. or so. strain into a fine strainer. Good Luck.
