I found an old archive about making butter with whipping cream from the store and had to try it. What fun!! I admit, I was skeptical, but it really made butter! So now I have butter, but I also have the buttermilk (I'm assuming that's what was left). What do I do with it? I put it in the freezer because I wasn't sure how long it would take me to find out what to do with it. Does freezing it hurt? Does anyone have a recipe that uses buttermilk? Thanks, Stace

Stacey, you can use it in many recipes that call for milk but richness would be nice. Like for example, pancakes, baking powder biscuits, some cakes etc.

I use up all my buttermilk in recipes that take milk. Potatoe soup, custard, puddings, pancakes, in mashed potatoes.

Hello Stacey,Buttermilk is an excellent item to help breading stick to foods that you want to fry. I use it to make onion rings, breaded pork chops, fish, chicklen, etc. Just dip the food in the buttermilk, shake off excess, dip the food into flour or cornmeal and drop into hot oil! It works better than just plain milk or water and your food will come out with a nice puffy breading around it.

Any of your quick bread recipes that call for milk, you can use buttermilk, just add 1/2 teaspoon of baking soda in addition to the called for baking powder.I agree with Ernest. Buttermilk makes the best batter for frying chicken or chicken fried steak. The gravy from the drippings is out of this world!
Buttermilk stored at an evenly cold temperature in the back of the fridge will keep almost forever and can be used for cooking as long as it doesn't grow mold.
