I have mixed feelings, and messages about eating frozen Chicken eggs. I have eaten eggs that froze in the hen house without a problem and even froze some fresh ones for later use. Haven't had an issue with it yet, but was wondering if anyone else has had problems and I just got lucky? I also know how eggs in the stores are treated, as my husband was a stocker in his youth. Eggs would sit in the back on pallets for months sometimes before hitting the cooler shelves out front. They would undergo heating and cooling, not being in a fridge. But then again, things may have change in the past 20 years where they are now keep refridgerated at all times, even when shipped? Would appreciate your thoughts here.

We are lucky our chicken lay all through winter are they are frozen every time, as we gather in the evening. not one problem with them in the last 6 years. enjoy your eggs.

Hello Michelle,

When we have a surplus of fresh eggs we usually do the following....we will scramble about a dozen at a time and put them in freezer containers to be stored in the freezer. They are thawed out we we need them. Thawed they tend to have a greenish color but taste fine.

We tried to hard-boil them and put them inside uncooked meatloaf and then freeze the meatloaf for future meals. This did not work because the eggs after they were frozen and then cooked in the meatloaf they became very rubbery and thus inedible.

If they are partically frozen because they were out in the coup too long, you may still use them. They just have to be thawed before cooking.

Surplus eggs that are not sold or bartered by us, usually are hard boiled and pickled. They is the best way to perserve them, in my opinion.

In one of the threads someone put eggs in ice trays and put them in the frezz'er and popped out what they wanted, one or two to cook with. Jim

Yes, I've done the ice cube tray trick - even have separated them out so I have just whites if needed. I was just making sure I wasn't setting myself up to get ill in the future. Temp's haven't been above freezing much in the Rockies lately, so the eggs are always frozen when I get home from work at night. Thanks for letting me know I was safe to eat them! Although I've had chickens now for the past 3 yrs, never did before and the freezing thing is a new twist!
