Cinnamon Loaf Bread Machine recipe needed

Does anyone have a recipe for a good Cinnamon bread in the bread machine? No raisins! Kinda like a cinnamon roll recipe, only into a loaf? I had this terrific breakfast at a Carrow's in Oregon that was called Grandma's Cinnamon Loaf French Toast. They used a Cinnamon bread, sliced up and made french toast with it and it was sooo yummy! Thought I'd try it in the bread machine. Thanks! Happy 2002!

Right off hand, I'd try a raisin bread recipe WITHOUT the raisins and add as much cinnamon as you wish, plus a dash of nutmeg.

For rapid setting (1 hr). All ingredients room temperature (70-80 F/21-27C). Water should be warm (100-110 F / 38-43 C). 12-14 ounces warm water, 1/2 tsp salt, 2 table spoons butter or margerine, 4 cups bread flour , 2 tablespoons dry milk, 2 tablespoons sugar, 1 1/2 teaspoons cinnamon, 4 teaspoons bread machine or fast acting yeast.

Add all ingredients except yeast to bread pan. Then add yeast to top of ingredients to ensure the yeast is dry at start of process. Select derired settings to bake in rapid mode. Start.

Hope this works for you. be sure to monitor during the kneading in case you have to dust or dampen the dough.

Hi! I Have an idea that might take a little extra work from you. Take the dough out of the bread maker(use an egg/ sweet dough) after the 2nd rise. Roll out the dough use a little butter cinnamon and sugar on it, roll up as for cinnamon rolls. Seal the ends off real good, then put it in the bread maker for the final rise and bake. Too much cinnamon slows down the action of the yeast: you may have to give it longer to rise.

So I tried something very similar to Rachel's suggestion. Not being familiar with my bread machine on Manual, I pulled the Sweet bread dough after it stopped (1st rising?), rolled it out - springie stuff! Then sprinkled Cinnamon/sugar, rolled up, pinched shut, plopped it into the bread pan, let rise to double (1 hour), then baked 15 min. til golden. Worked great! Sliced it up and egg battered for French toast the next morning. Quite tasty!!! (I add vanilla to my French toast egg mixture). Try it sometime for something special!

Also, instead of 2 Tblsp butter or margarine use 2 Tblsp OLIVE OIL - yum
