COOKBOOK HELP NEEDED

greenspun.com : LUSENET : Countryside : One Thread

I am trying to develop a cookbook for people with dietary restrictions as follows. 1. No Flour (of any kind) Sprouted grains OK. 2. No pastas (unless someone has a sprouted grain pasta recipe) 3. No sugar, honey, corn syrup, molasses. Only artificial sweetners. 4. No corn, rice or high starch foods (potatoes) All squashes are OK as are most fruits and vegetables, as well as all proteins. Dairy is OK and plain yogurts, etc.

If the recipe is used, I would be pleased to give credit to the contributor in the final published book.

Thanks for your help.

Your cookbook may be a good idea, but I'm not sure quite what you are aiming for.

Why would someone AVOIDING grain eat sprouted grain? Sprouted ANYTHING has more vitamins, it is true, but many things have vitamins and if a person is avoiding grain, wouldn't it be better to get vitamins from a non-grain source? Also, are beans or peas allowed?

Personally, as a diabetic, I am not supposed to consume too much fat, so I use a fair amount of grains and beans (in small portions!) to give my system a gradual release of food into my blood stream without eating too much meat. Fruit, milk, and starchy vegetables all are digested much to quickly to eat large portions of them, and other vegetables just plain don't have enough calories to keep me working outside.
