The best resource for this information is the Hometown Creamery Revival News website at http://www.ibiblio.org/creamery/ , but unless you are a multimillionare I'd suggest contacted the used equipment dealers first, and trying to piece together a plant.

There are new equipment manufacturers these days, like Pladot, who are courting displaced yuppies with very expensive, state of the art equipment, but it's not necessary (some of the best cheese in this country is made by very low tech operations run by folks who understand cheesemaking), and frankly I can't see how it ever will pay for itself.

Other great resources available on that site are _The Small Dairy Resource Book_, which lists lots of books, websites and other resources.

Also, I strongly recommend "Creamline", a quarterly magazine that has lots of articles about starting a small commercial cheesemaking operation. It will also have used equipment advertised in it from time to time.

And just recently the editor of "Creamline" started a new magazine for home cheesemakers called "The Home Dairy News". A free issue is available for download at http://www.ibiblio.org/creamery/news.html#HDN .
