It would be perfectly OK if the squash is an open-pollinated variety.

No, it would not be advisable to save seed from store bought squash because more than likely it would be a hybrid and the offspring would not grow back true and would be unstable. You would not get the same exact squash as it came from the store, you would get a variegated assortment of all the types that it took to breed the original hybrid.
